Preparation method
Sprinkle the sugar into a small pan or a stainless steel ladle. Heat over low heat until the sugar completely melts and turns into amber-colored caramel. Stir constantly to prevent burning.
Once the sugar has completely melted, remove it from the heat. Add a pinch of baking soda and stir quickly. The mixture will start to foam and its color will lighten.
Immediately pour the mixture onto baking paper or a silicone mat. Gently press down with the bottom of a glass or a metal spatula to form a flat disc.
Chef's tip
Use a non-stick surface or silicone mat so the caramel does not stick.
