INGREDIENTS
- 900–1000 g watermelon, cubed
- 10–12 g fresh basil, thinly sliced
- 110 g feta cheese – crumbled or cut
- Salt
- Pepper
INGREDIENTS FOR THE DRESSING
- 15 ml freshly squeezed lime juice (approx. juice of half a lime)
- 25 g honey
- 30 ml olive oil
- 15 ml balsamic vinegar
PREPARATION
- 1Place the watermelon, basil, and feta in a large bowl.
- 2In a smaller bowl, mix together the lime juice, honey, olive oil, and balsamic vinegar.
- 3Pour the dressing over the watermelon mixture, then gently toss to combine.
- 4Season with salt and pepper to taste.
- 5Serve immediately, or cover and chill for up to 1 hour until serving.
