Cut the baguettes in half lengthwise, then gently hollow out the insides slightly with a spoon to create a well for the topping.
Thinly slice the brown button mushrooms and the onion, and finely chop the garlic.
Melt the butter with the olive oil in a pan, then sauté the onion over medium heat until translucent. Add the garlic and mushrooms, and cook for 6-8 minutes until the mushroom liquid evaporates and they turn a nice golden brown. Season with salt and pepper.
Chef's tip
For a spicier version, sprinkle chili flakes or hot pepper paste over the mushroom filling before baking.
Zapiekanka is a classic of Polish street food - originally made with slices of bread, but using a baguette makes the result even crispier.
If there are leftovers, reheating them in the oven the next day, either as they are or wrapped in aluminum foil, will make them crispy again.
