Őszi szüreti hangulatot idéző, kényeztető magyar desszert: a friss szőlőből fűszerekkel főzött, selymes szőlőpudingot roppanós, vajban pirított aranybarna dió és üde szőlőszemek koronázzák. Természetesen gluténmentes őszi finomság.

Preparing and spicing the grape juice
Thoroughly wash and destem the grapes. Set aside a handful of nice grapes for serving later. Place the remaining grapes into a heavy-bottomed pot and crush them slightly with a fork or potato masher to release their juice.
Add the cinnamon stick, whole cloves, granulated sugar, vanilla sugar, and freshly squeezed juice and finely grated zest of half a lemon. Bring to a boil over medium heat, then simmer gently over low heat for 10-12 minutes until the grapes soften completely and release their aroma.
Strain the cooked grapes through a fine sieve into a clean bowl, pressing them through to remove the skins and seeds. This yields approximately 500-600 ml of clear, spiced grape juice.
Chef's tip
For an even more intense autumn flavor, you can also add a star anise to the spices when cooking the grape juice.
You can also serve the pudding with a spoonful of cold Greek yogurt or freshly whipped cream for an even creamier treat.
