Preparing the Meat
Preheat the oven to 180 °C.
Season the pork loin slices thoroughly with salt and pepper on both sides. Heat oil in a pan over high heat, then sear the meat until golden brown on all sides. Afterward, place it on a baking tray and put it in the 180 °C oven for 4 minutes.
Remove the tray from the oven, drizzle some of the sauce over the meat, then return it to the oven for another 3 minutes. Before serving, let the meat rest at room temperature for 4 minutes, then drizzle the remaining sauce over it on the plate.
Chef's tip
Do not overcook the meat in the pan; just give it a nice crust. It will cook perfectly and remain juicy in the oven.
