Preparation method
Thoroughly clean the vegetables, dry them, and slice them lengthwise into pieces about 2-3 mm thick.
Heat a generous amount of oil in a pot to about 160°C.
Once the oil is hot, gradually add the vegetables in small batches and fry them until golden brown.
Chef's tip
Instead of slicing with a knife, you can use a grater or peeler to create slices of more uniform thickness. Salt the vegetable slices while they are still hot. But they are also delicious unsalted.
