Preparation method
Finely chop 50 g of smoked salmon, then mix it in a bowl with cream cheese, ricotta, lemon zest, lemon juice, and chopped dill.
Line small bowls with cling film so that the edges overhang. Then line the inside of the bowls with the remaining salmon slices, ensuring they completely cover the bottom and sides, and the slices also overhang the edge of the bowl.
Fill the prepared bowls with the cheese and salmon cream. Fold the overhanging salmon slices over the cream, then tightly fold the edges of the film over as well.
Chef's tip
Only grate the yellow zest of the lemon; the white pith can be bitter.
The most beautiful shape can be achieved with bowls approximately 8 cm in diameter and 5 cm high.
