Drain the chickpeas, rinse thoroughly with cold water, then pat them completely dry with kitchen paper. This step is crucial for achieving crispiness!
Place the dry chickpeas in a bowl, add the smoked paprika, oil, and salt, then mix thoroughly to ensure all chickpeas are coated with the spices.
Chef's tip
Make sure to dry the chickpeas very thoroughly, otherwise, instead of roasting, they will steam and won't be crispy.
Feel free to experiment with other spices: cumin, garlic powder, or even a little chili would also go well with it.
