INGREDIENTS
- 2 larger slices of bread
- 400 g tomatoes
- 10 g peeled red onion
- 30 g grated Parmesan
- 60 ml extra virgin olive oil
- ½ tablespoon red wine vinegar
- 1 peeled garlic clove
- 5 large basil leaves
- Freshly ground pepper
- Salt
PREPARATION
- 1Finely chop the onion and tear the basil into smaller pieces.
- 2Cut out the seedy core of the tomatoes and dice the flesh into approximately half-centimeter pieces. Place them in a bowl, add the onion, basil, vinegar, and olive oil, season with salt and pepper to taste, then mix.
- 3In a pan, toast the bread over medium heat until both sides are golden brown. While still warm, rub it with garlic, top with the tomato mixture, and grate Parmesan cheese over it.
