Preparation method
Preheat the oven to 180 degrees Celsius.
Slice the baguette thinly. Dice the pancetta finely and fry it in a pan until crispy. Grate the cheddar cheese finely, then mix it with the beaten eggs, mustard, and half of the fried pancetta.
Stir in the chopped parsley and season with freshly ground pepper. Spoon the mixture onto the baguette slices, then sprinkle with the remaining crispy pancetta.

When serving, you can offer fresh cherry tomatoes or a little balsamic glaze for an even more intense flavor experience.
