Preparation method
Halve and pit the apricots. Cut the smoked cheese into bite-sized pieces (if using korbácska, cut to appropriate length), then wrap each piece with a slice of pancetta.
Thread the ingredients alternately onto the skewers: half an apricot, a piece of smoked cheese wrapped in pancetta, and a mini mozzarella ball. Repeat until the skewer is full.
Preheat the grill to medium heat. Grill the skewers on all sides for about 8-10 minutes, until the pancetta is crispy, the apricots are soft, and the cheeses begin to melt slightly.
Chef's tip
If the lemon juice is too sour, you can soften the taste of the dressing with a little honey or sugar.
