Preparation method

Finely grind or finely chop the beef with a sharp knife. For quicker preparation, you can also use pre-prepared tartare meat.

In a bowl, mix the mayonnaise, Dijon mustard, egg yolks, Worcestershire sauce, and Tabasco. Add the finely chopped capers and shallots, then mix thoroughly.

Fold the meat into the sauce, season with salt and freshly ground pepper. Let it rest in the refrigerator for 10–15 minutes for the flavors to meld perfectly.

For perfect results, use high-quality, aged beef, and ensure the eggs are as fresh as possible.
