Preparation method

Preparing the rice mixture

Mix the cooked rice with grated Parmesan, salt, pepper, dried oregano, and grated lemon zest. Work thoroughly to get a moldable mixture.

Shaping and filling

Take a tablespoon of rice in your palm and flatten it. Place a cube of mozzarella in the center, then close the rice around it and form a ball. Make sure no cheese is sticking out.

Breading

Prepare three bowls: put flour in one, beaten eggs in the second, and breadcrumbs in the third. Roll the balls first in flour, then in egg, and finally in breadcrumbs.

Chef's tip

It's advisable to shape the rice with wet hands so it doesn't stick as much to your palm. If you want an even more intense flavor, you can mix finely chopped ham or sun-dried tomatoes into the rice.
