INGREDIENTS

  • 6 apricots
  • 2 teaspoons cane sugar
  • half a lime + 20 ml lime juice
  • a handful of fresh mint
  • soda water
  • Ice

PREPARATION

    Pit the apricots, cut them in half, and put them into a blender with one tablespoon of water. Blend until smooth – if you want a really creamy consistency, strain it through a fine sieve.

    Divide the lime juice, the halved lime, one teaspoon of cane sugar each, and a few mint leaves into two glasses. Muddle everything well with a cocktail muddler or the end of a wooden spoon to release the flavours.

    Spoon 3 teaspoons of apricot puree into each glass, add a few ice cubes, top up with soda water, insert a straw, and stir.

    If you're in the mood for something more grown-up, you can spice it up with a little white rum.
