INGREDIENTS
- 6 apricots
- 2 teaspoons cane sugar
- half a lime + 20 ml lime juice
- a handful of fresh mint
- soda water
- Ice
PREPARATION
- 1Pit the apricots, cut them in half, and put them into a blender with one tablespoon of water. Blend until smooth – if you want a really creamy consistency, strain it through a fine sieve.
- 2Divide the lime juice, the halved lime, one teaspoon of cane sugar each, and a few mint leaves into two glasses. Muddle everything well with a cocktail muddler or the end of a wooden spoon to release the flavours.
- 3Spoon 3 teaspoons of apricot puree into each glass, add a few ice cubes, top up with soda water, insert a straw, and stir.
- 4If you're in the mood for something more grown-up, you can spice it up with a little white rum.
