Preparation method
Remove any pin bones from the salmon fillet with tweezers. In a bowl, mix the brown sugar with the coarse sea salt, coarsely ground pepper, and finely grated lemon zest.
Spread one-third of the sugar-salt mixture on the bottom of a baking tray or dish. Place the salmon fillet skin-side down on top, cover it with fresh dill, then cover with the remaining mixture. Finally, drizzle with alcohol (vodka or brandy).
Cover tightly with cling film, and refrigerate to marinate for 12–16 hours.
Chef's tip
When grating the lemon zest, make sure only the yellow part gets into the food, as the white pith is bitter.
You can also serve the finished gravlax with a dill-mustard sauce for an even more authentic experience.
