- 300 g cooked cocktail shrimp
- 120 g cherry tomatoes
- 200 g mayonnaise
- 2 tbsp garden cress
- 2 tbsp spring onion
- 30 ml cognac
- 3 g granulated sugar
- 4 pcs fresh basil leaves
- 1 pc lemon
- 1 pinch salt
Cut the cherry tomatoes into sixths and gently press them with a spoon in a bowl to release their juice.
Add the remaining ingredients: cooked cocktail shrimp, mayonnaise, finely chopped spring onion, garden cress, cognac, and sugar. Season with a pinch of salt and freshly squeezed lemon juice.
Mix everything thoroughly, then garnish with fresh basil leaves. Refrigerate before serving to allow the flavors to meld and the cocktail to cool pleasantly.
Chef's tip
The cocktail can also be served in elegant glass cups or on iceberg lettuce leaves for an even more impressive effect.
