Peel the apples, cut them into eighths, and remove their cores. Place them in a saucepan, drizzle with lemon juice, and pour in 700 ml of water.

Add the sugar, cinnamon sticks, star anise, cloves, lemon zest, and a slice of lemon.

Cook over low heat for about 20 minutes until the apples are tender but not falling apart. The compote is best served lukewarm.
Chef's tip
Only use the yellow zest of the lemon; the white pith can be bitter.
The apples should be tender, but be careful not to overcook them.
Lemon juice helps preserve the bright color of the apples, preventing them from browning.
