Preparation
Preheat the oven to 180 °C (conventional top and bottom heat). Line a medium-sized baking pan (approx. 20x30 cm) with baking paper, or grease lightly with butter and dust with flour.
Wash the pears thoroughly, peel them, quarter them, and remove the cores. Cut half of the pears into smaller cubes (these will go into the batter) and slice the other half into neat wedges for the top of the cake. Dust the pear slices with ground cinnamon.
Mixing the batter and baking
In a mixing bowl, beat the softened butter with the granulated sugar and vanilla sugar until fluffy. Add the eggs one at a time, mixing until smooth after each addition.
Chef's tip
For the best results, choose ripe yet firm pears (such as Williams or Alexander pears), so they will not make the batter soggy during baking, yet will stay wonderfully juicy.
For an even more intense chocolate experience, you can also fold 50 g of finely chopped dark chocolate into the batter.
Stored in an airtight container, the cake becomes even softer and juicier by the next day.
