Preparing the flatbread dough
Stir the dry yeast and granulated sugar into the lukewarm water, then let it rest for 5-10 minutes until a delicate foam forms on top.
In a large mixing bowl, combine the fine wheat flour and fine salt. Pour in the activated yeast mixture and 20 ml of extra virgin olive oil. Knead into a smooth, elastic, slightly soft dough (about 8-10 minutes of kneading by hand or with a machine).
Shape the dough into a ball, lightly brush with olive oil, cover with a clean kitchen towel, and let rise in a warm place for 45-60 minutes until doubled in size.
Chef's tip
A few drops of thick balsamic glaze added when serving can further enhance the natural sweetness and creaminess of the figs and goat cheese.
If you want a truly crispy crust on the bottom, preheat the baking sheet together with the oven, and slide the dough on the parchment paper directly onto the hot sheet.
