Ingredients

  • 500 g pork belly
  • 1 tbsp granulated sugar
  • 2 tbsp fish sauce
  • 1 tsp salt
  • 1 pinch black pepper
  • 1 bunch spring onion for garnish
  • 250 g jasmine rice

    Heat the sugar with a little water in a pan over medium heat until it starts to caramelize. Then add the diced pork, fish sauce, salt, and pepper. Mix thoroughly, then let it rest for 30 minutes.

    Sear the meat for about 8 minutes until it gets a nice dark color. Pour in enough water to just cover the meat, then cook for about 1 hour until most of the water evaporates and the meat becomes tender.

    Serve with freshly cooked jasmine rice, garnished with finely chopped spring onions.
