Preparation method
First, prepare the sauce. Mix the Greek yogurt with oregano, crushed garlic (2 cloves), lemon juice, salt, pepper, and a little olive oil. Place in the refrigerator to chill.
In a little olive oil, sauté the finely chopped red onion and the remaining 4 cloves of crushed garlic. Add the drained beans and the gyros spice mix. Mash the beans with a potato masher or fork, mix, and sauté over low heat for 10 minutes. Let it cool, then season with salt and pepper to taste.
Add the eggs and flour to the bean mixture, then mix thoroughly. Form 8 balls, roll them in a little flour, and gently press them down to form patties.
