Preparation method
Prepare all ingredients: finely chop the onion, garlic, and vegetables. Spread the already cooked and cooled jasmine rice on a tray so that the grains separate nicely.
Wash the shrimp, season with pepper, and drizzle with a little oil. Add a clove of crushed garlic and chili to taste. Heat oil in a large pan or wok and cook the shrimp for 2-3 minutes until pink and firm. Remove and set aside.
In the same pan, cook the beaten eggs until you get a soft scramble. Set this aside with the shrimp.
Chef's tip
For the best results, use rice cooked the day before and stored in the refrigerator, as this will make the final dish truly fluffy.
