
Spaghetti Squash with Shrimp

- ½ pc squash
- 10 g butter
- 150 g shrimp
- 14 g garlic
- 10 pcs cherry tomatoes
- 2 g thyme
- 2 g oregano
- 2 g rosemary
- 2 g fresh tarragon
- 2 g basil
- 5 ml olive oil
- 1 g salt
- 1 g pepper
Scoop out the seeds from the squash, then fill it with fresh herbs and butter. Cover with aluminum foil and bake in a preheated fan oven at 160°C for 45 minutes. Scrape out the flesh of the baked squash with a fork to create a spaghetti-like texture.
Halve the washed cherry tomatoes and crush the garlic. Pour olive oil into a heated deep pan, then add the garlic and the cleaned, deveined shrimp. Sauté briefly, then add the tomatoes, season with salt and pepper. Sauté for about 2 more minutes, finally stir in the spaghetti squash and season to taste.
Garnish with basil leaves and a lemon wedge when serving.
