Cut the bread into approximately 2 cm cubes and set aside.
Heat the olive oil in a pan over medium heat. Add the chopped red onion and garlic, then sauté until translucent. Add the thinly sliced zucchini and fry for a few more minutes until slightly softened. Remove from heat and let cool.
In a large bowl, combine the bread cubes, halved cherry tomatoes, olives, crumbled feta, and grated cheese.
Chef's tip
You can also use stale challah instead of bread if you desire a slightly sweeter, richer flavor.
When serving, sprinkle with fresh basil or parsley for an even fresher Mediterranean experience.
