Preparation method
In a small bowl, combine the tamarind paste, fish sauce, and brown cane sugar. Mix thoroughly until the sugar is completely dissolved.
Heat the oil in a wok or large pan. Add the finely chopped garlic, ginger, chili, and kaffir lime leaves, then sauté them briefly until fragrant.
Add the prawns to the pan, pour over the prepared tamarind sauce, and mix thoroughly. Sauté/cook the prawns for a few minutes until cooked through and well coated with the sauce.
Chef's tip
For an even more intense flavour, sprinkle with fresh coriander or spring onions when serving.
