Ingredients
- 2 bunches of radishes
- 1 tbsp olive oil
- 80 g goat cheese
- 2 handfuls of arugula
- 40 g pistachios
- 1 handful of fresh mint
- 30 g butter
- 1 tsp honey
- 2 cloves garlic
- 1 tbsp lemon juice
- salt to taste
- pepper to taste
Steps
- 1Preheat the oven to 200 °C and line a baking tray with baking paper. Wash the radishes, trim their stems and roots, then cut them in half. Season with salt, pepper, drizzle with olive oil, and toss to coat evenly.
- 2Spread the radishes evenly on the baking tray and bake in the preheated oven for about 35 minutes, until tender and slightly browned.
- 3Once done, melt butter in a pan and heat until it foams vigorously and turns slightly brown. Add the finely chopped garlic and the roasted radishes, then sauté for a few minutes, stirring occasionally.
- 4Remove the radishes from the pan. Pour the remaining butter into a small bowl, add a pinch of salt and pepper, lemon juice, and honey. Whisk with a whisk until it forms a creamy dressing.
- 5In a large bowl, combine the arugula, goat cheese pieces, roasted radishes, chopped mint, and pistachios. Drizzle with the dressing and toss everything together.
