A hagyományos tepsis burgonyafelfújt a magyar konyha egyik legfinomabb, mégis méltatlanul elfeledett klasszikusa. A selymesre tört burgonya, a gazdag tejföl, az olvadó trappista sajt és a habbá vert tojásfehérje találkozásából egy kívül ropogósra sült, belül pedig elképesztően könnyű és krémes egytálétel születik. Kiváló választás laktató vegetáriánus főételként vagy akár vasárnapi köretként is.

Preparation and potato purée
Wash the potatoes thoroughly, then boil them unpeeled in lightly salted water until tender, about 25-30 minutes.
Once cooked and slightly cooled, peel them and mash thoroughly with a potato ricer into a bowl while still warm, until you get a smooth, lump-free purée.
Mix 40 g of soft butter (use the remaining 20 g to grease the baking dish), the sour cream, 1 teaspoon of salt, freshly ground black pepper, and a pinch of freshly grated nutmeg into the still-warm potatoes.
Chef's tip
The secret to an airy texture is folding the egg whites into the mixture in two batches: the first third loosens the potato mixture, while the remaining two-thirds provide volume and lightness.
It is best to choose type C or B starchy potatoes, as these make the silkiest and easiest to whip purée.
