Alnatura Organic Wholegrain Rice Flour

Gluten-free, finely ground, wholegrain rice flour: Similar to corn starch, wholegrain rice flour is suitable for thickening sauces, as well as for baking desserts, pastries and baked goods. You can replace 20-30% of the classic flour with it to achieve optimal baking properties. Alnatura wholegrain rice flour comes from organic farming.

Use - Gluten-free chocolate muffin

Preparation time
15 minutes + 20-25 minutes baking time

Ingredients
For 12 pieces:

• 70 g Alnatura Organic Chocolate Coating
• 60 g butter or margarine + 1 tablespoon for the mold
• 110 g Alnatura Organic Raw Cane Sugar
• 1 teaspoon Alnatura Organic Lemon Peel Freeze-dried, grated, with lemon oil
• 2 eggs
• 210 g Alnatura Organic Wholegrain Rice Flour
• 15 g Alnatura Organic Cocoa Powder
• 1 pinch Alnatura Sea Salt
• 2 teaspoons Alnatura Organic Baking Powder
• 100 g Alnatura Organic Whipping Cream

Preparation

1. Prepare the muffin tin. Preheat the oven to 180°C top and bottom heat. Grease the muffin tin recesses or line with muffin papers.
2. Heat water in a saucepan. Break the chocolate coating into small pieces and place in a heatproof bowl. Place the bowl over the hot water bath and slowly melt the chocolate.
3. Mix the dough. Beat the butter with the sugar and lemon zest until fluffy for a few minutes. Gradually add the eggs one at a time. Mix the flour, cocoa, salt and baking powder together, then slowly add to the butter-sugar mixture. Finally, add the cream and melted chocolate and mix together.
4. Bake the muffins. Fill each muffin paper ¾ full with batter and bake the pan on the middle rack for 20-25 minutes.
