PREPARING THE PANCAKES
Using a hand whisk, mix all ingredients into a smooth but rather thin batter, then let it rest in the refrigerator for half an hour.
Then, in a non-stick pancake pan, fry the pancakes on both sides with a little oil.
ASSEMBLY AND SERVING
Place the cheese on the cooled pancake (not all the way to the edge), then add the mortadella, and finally the tomatoes, arugula, or a little fresh cream cheese. Combinations can be varied according to taste. It is important that the cheese is at the bottom to 'seal' the pancake when frying.
