Preparation and shaping
Roll out the puff pastry to about 3 mm thick. Using a large cookie cutter (e.g., bear-shaped), cut out 20 identical shapes. If not made for children, you can cut them into simple squares to avoid leftover dough.
Place half of the cut-out shapes on a baking sheet lined with parchment paper, and set the other half aside.
Preparing the fillings
For the sweet filling, cream 30 g butter with sugar until fluffy. Add one egg yolk and the grated lemon zest, then mix in 60 g cottage cheese. Beat the egg white until stiff peaks form, and gently fold it into the mixture. Finally, mix in the blueberries or chopped strawberries.
Chef's tip
If you cut out more intricate shapes, do not re-knead the leftover dough, as it will lose its flaky texture. Instead, cut it into smaller pieces, sprinkle with spices or seeds, and bake until crispy – it will make a great snack!
