Dough preparation
Separate the egg into yolk and white.
In a small bowl, crumble the yeast into the lukewarm milk and mix.
In the bowl of a food processor, mix the two types of flour, a pinch of pepper, and salt. Add the egg yolk and the milk-yeast mixture. Knead the dough on medium speed for about 5 minutes until completely smooth. Cover with a clean kitchen towel and let it rest and rise in a warm place for 1 hour.
Chef's tip
The milk should not be too hot when adding the yeast, as the heat can destroy the yeast cells.
A cast iron pan is best for frying.
Use good quality, thick sour cream for serving.
You can mix a little vodka and extra pepper into the sour cream for adult guests.
Salmon caviar can also be replaced with smoked salmon slices.
