A tigelle (más néven crescentina) Modena és az olasz Emilia-Romagna régió legendás, kerek serpenyős lepénykéje. A kelt tésztából szaggatott kis korongokat száraz serpenyőben sütik ropogósra, így kívül aranyló kéreg képződik rajtuk, belül pedig felhősen puhák maradnak. Még forrón kettévágva, gazdag és krémes olasz háromsajtos krémmel töltjük meg: a karakteres Gorgonzola, a selymes mascarpone és a frissen reszelt parmezán sajt hármasa lágyan összeolvad a lepény melegétől, amit egy csipetnyi finomra aprított friss rozmaring tesz igazán ellenállhatatlanná. Kiváló meleg előétel, borkorcsolya vagy könnyed vacsora!

Kneading and proving the tigelle dough

In a large mixing bowl, combine the all-purpose flour, instant yeast, granulated sugar, and fine salt.

Pour the lukewarm milk and extra virgin olive oil into the flour mixture (if needed, add 50-80 ml of lukewarm water to get a soft but elastic dough). Knead for 8-10 minutes by hand or with a machine until you get a smooth, non-sticky dough.

Shape into a ball, place in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm place for about 45-60 minutes, until doubled in size.

Chef's tip

Tigelle are traditionally made in a special ribbed cast-iron press (tigelliera), but they can be made perfectly at home in a heavy-bottomed pan with a lid: the lid helps retain heat and steam, so the dough puffs up and bakes through beautifully.

It is worth preparing the cheese spread at room temperature half an hour before baking, so the Gorgonzola and mascarpone are easy to blend and melt instantly inside the hot flatbreads.
