A teba shioyaki a tradicionális japán izakayák (gasztrokocsmák) egyik legkedveltebb street food fogása: ropogósra sült, aranybarna csirkeszárnyak fokhagymás-gyömbéres pácban, durva szemű tengeri sóval fűszerezve, friss citromlével tálalva.

Preparation and marinating
Pat the chicken wings completely dry with paper towels - this step is the most important for achieving perfectly crispy skin. Prick the meatier parts of the wings in a few places with a sharp knife or a fork so that the flavors can penetrate well.
In a bowl, mix together the finely grated garlic and ginger, sesame oil, and half of the sea salt and ground black pepper. Toss the chicken wings in the mixture, then let them marinate at room temperature for 15-20 minutes.
Baking
Preheat the oven to 220 °C (200 °C fan). Line a baking sheet with baking paper and place a wire rack on top so that the wings can crisp evenly on all sides.
Chef's tip
The secret to Japanese salted chicken wings is dry skin: if you have time, let the wings rest uncovered in the refrigerator for 1-2 hours before salting; this will make the final result even crispier!
