Rice preparation
Rinse the sushi rice thoroughly under cold water until the water runs almost completely clear. Add the water, cover, and bring to a boil. Once boiling, reduce the heat to minimum and cook for 15 minutes without lifting the lid. Remove from the heat and let it rest for another 10 minutes.
Meanwhile, prepare the seasoning. In a small saucepan, mix the rice vinegar, sugar, and salt. Heat briefly until the sugar and salt dissolve, then let it cool slightly.
Place the warm rice in a bowl and gently fold in the seasoning. Let it stand for 5 minutes, then cool to room temperature, stirring occasionally. The rice should be pleasantly sticky, holding its shape, but the grains should remain separate.
