Preparation and Cooking
Prepare a pot and fill it with enough water to cook the potatoes. Peel the potatoes, cut them into small cubes, place them in the pot, and bring the water to a boil. Meanwhile, peel the onion and cut it into thin slices. When the water starts to boil, salt it, reduce the heat to medium, cover the pot, and cook the potatoes for 9-10 minutes. Then add the cod fillets and continue to cook covered over medium heat for another 5 minutes.
While the potatoes and cod are cooking, heat 1 tablespoon of oil in a large pan over medium heat. Add the butter and sliced onion, then sauté for 4-5 minutes. Then pour in the cooking cream, add the dried thyme, dried dill, ground caraway, salt, and pepper. Mix well and cook the sauce for 3-4 minutes over medium heat, then remove from heat.
Baking
Preheat the oven to 200 °C and prepare a baking dish (approx. 23 cm x 27 cm). When the potatoes and cod are cooked, drain them and add them to the sauce in the pan. Mash everything roughly with a fork (it should not be completely puréed). Smooth the mixture into the baking dish. Grate the Edam cheese and sprinkle it over the top. Place in the oven and bake for 20-25 minutes, until the cheese is golden brown.
Chef's tip
Serve with fresh rye bread and a little butter for an authentic Icelandic experience.
