Finely chop the garlic, shallots, and ginger, then sauté them together with the sliced chili in a little sunflower oil in a pan or wok.
Add the minced meat and sauté for about 2 minutes until it turns white and crumbles. Then pour in the fish sauce, add the green beans, and sauté together for another 3-5 minutes until the meat is fully cooked and the beans remain crisp.
Finally, stir in the fresh mint and lime juice. Season with salt and pepper to taste.
Chef's tip
If you desire an even more intense flavor, sprinkle with fresh coriander or toasted peanuts when serving.
