
Pork Patties with Feta Cheese

Preparing the Meat
Finely chop the garlic and red onion.
Crumble the feta cheese coarsely by hand and set aside. Cut one whole chili pepper in half lengthwise, remove the seeds, and finely chop the flesh. Also chop 40 g of olives.
In a bowl, mix the meat, onions, chili, olives, breadcrumbs, mint, salt, and pepper, excluding the cheese, and refrigerate for 20 minutes to rest. Then divide the seasoned meat into 8 portions and form each into a patty.
Chef's tip
You can also coarsely purée the olives, spring onion, chili, lemon juice, and olive oil with an immersion blender, then mix this with the cucumber, dill, and lemon zest.
You can use less chili or omit it entirely, according to taste.
