Heat the oil in a hot wok or pan, then sauté the prepared and cleaned mushrooms until golden brown.
Meanwhile, cook the udon noodles in boiling, unsalted water for about 3 minutes (or according to package instructions), then drain and rinse with cold water. Tip: Use plenty of water for cooking.
Add the finely chopped garlic and ginger to the mushrooms, sprinkle with sugar, and pour in the soy sauce. Then add the spring onions cut into larger pieces, and sauté together for another minute.
Chef's tip
If the noodles seem too dry during sautéing, add a little vegetable broth to achieve a juicier consistency.
