Rinse the millet four times with hot water to remove any bitterness. Then cook it in lightly salted water over low heat until tender.
Finely grate the carrots and finely chop the red onion. Sauté both vegetables separately with a little salt in a pan.
Mix the cooked millet with the sautéed carrots and onion, then add the crumbled smoked tofu. Add all the spices (rosemary, ginger, lovage, thyme, coriander, turmeric, dried onion, nutmeg, smoked paprika, garlic powder, pepper, salt), soy sauce, nutritional yeast, cornstarch, and corn flour.
