Preparation method
For the dough, mix together the flour, cornstarch, and salt, then slowly pour in the hot water. Knead into a firm, non-sticky dough. Let it rest for 30 minutes.
Meanwhile, finely chop the Chinese cabbage. Heat a little oil in a pan and sauté the sliced garlic, chopped spring onions, and half of the finely chopped chili pepper. When the garlic becomes fragrant, add the cabbage and shrimp. Stir in 3 tablespoons of soy sauce, season with pepper, then remove from heat and set aside.
In a small bowl, prepare the dipping sauce: mix together the remaining 8 tablespoons of soy sauce, sweet chili sauce, 1 tablespoon of sesame oil, one chopped spring onion, a little grated ginger, and the remaining chili.
