Preparation method
Roughly chop the figs, then cook them in 120 ml of water for about 5 minutes until softened. Add the sugar, lemon juice, and honey, then cook for another 1 minute. Let it cool slightly, then purée the mixture with an immersion blender.
Preheat the oven to 200 °C.
Divide the puff pastry into two parts and roll both out on a floured surface to a thickness of 2 mm. Brush both pastry sheets with egg yolk.
Chef's tip
Serve the sticks as a luxurious wine snack. The sweet and salty combination of fig and pecorino is addictive! Store in a dry place and consume fresh if possible.
