
Turkey breast steak with roasted vegetables

Ingredients overview
- 160 g carrot (approx. 2 pcs)
- 200 g zucchini (1 smaller pc)
- 300 g sweet potato (1 pc)
- 300 g turkey breast fillet
- 100 g sour cream
- 1 teaspoon lemon juice
- 2 teaspoons olive oil
- 2 pinches salt
- 1 pinch ground black pepper
Wash and peel the carrots and sweet potatoes, then cut them into cubes. Young zucchini does not need to be peeled, just wash it and also cut it into cubes. Place the vegetables on a baking sheet lined with parchment paper, drizzle with half of the olive oil, and bake in a preheated oven at 200 °C for about 20 minutes.
Take the meat out of the refrigerator one hour before cooking. Cut it into slices about 1.5-2 cm thick, then season with salt and pepper. Heat a grill pan with the remaining oil and cook the turkey breast slices on both sides for a few minutes until golden brown and juicy.
For the dressing, mix the sour cream with lemon juice, a little salt, and pepper. Serve the roasted vegetables with the turkey steak and fresh dressing.
