A sós burgonyás babka egy lenyűgöző formázású, kívül aranybarnára sült, belül habkönnyű és foszlós magyaros pékremek. A főtt áttört burgonyával dúsított kelt tésztába krémes, fűszerpaprikás-köményes túrót és lágyra pirított lilahagymát fonunk. Önmagában vagy tartalmas levesek mellé is fejedelmi fogás!
Preparation method
Preparing and proofing the dough
Boil the potatoes in their skins in lightly salted water until tender, then peel them while still warm and mash completely smooth with a potato ricer. Allow to cool to lukewarm.
Stir the sugar into the lukewarm milk, crumble in the fresh yeast, and let it proof for 10 minutes.
Sift the flour into a large bowl, add the mashed potatoes, melted butter, 1 whole egg, the activated yeast milk, and 1 teaspoon of salt. Knead into an elastic, shiny dough. Cover and let rise in a warm place for 50 minutes until doubled in size.
Chef's tip
The potato dough stays exceptionally soft for days; before serving, it is worth popping it back in the oven or toaster for a few minutes to refresh it.
You can also add a clove of minced garlic or a pinch of smoked paprika to the curd filling for an even more intense flavor.
