Instructions
Heat the olive oil in a pan over medium heat. Add the chopped red onion and sauté for about 3 minutes until softened. Then add the garlic and sauté for another 20 seconds.
Pour the rinsed black beans and water (or bean cooking liquid) into the pan. Increase the heat to medium-high and let the mixture gently simmer.
Gently fold in the pre-cooked brown rice and cook for another 2 minutes until the flavors meld and the dish is heated through. Just before serving, stir in the fresh cilantro, diced bell pepper, and jalapeño. Season with salt and pepper to taste.
