Start by preparing the caramelized onion: peel the red onion and cut it into thin half-rings. Heat a pan, pour in enough cooking oil, then add the onion. Stir occasionally and fry until golden brown in a few minutes. When ready, remove from the pan and set aside.
Divide the ground beef into two equal parts and form them into balls. Place them in the hot pan and flatten them into patties with a spatula. Cook one side, then flip and cook the meat through.
Meanwhile, prepare the dressing: simply mix the mayonnaise, yogurt, mustard, honey, and garlic powder until smooth. Spread a larger tortilla with the dressing (leaving about 3 cm free at the edges), then add chopped romaine lettuce and the cooked beef patty. Place the cheese slices, sliced gherkins, caramelized onion, and nacho chips on top. Spread a smaller tortilla with the dressing as well, and place it sauce-side down on the nachos.
Chef's tip
For an even more intense flavour experience, use red cheddar cheese!
Serve with fresh fries or a light green salad.
