Place the leftover cooked rice in a spacious mixing bowl and loosen the grains with a fork. Cut the cured sausage into small cubes, slice the spring onions along with their green tops, and coarsely grate the Trappist cheese.

Add the diced sausage, grated cheese, spring onions, and 2 tablespoons of sour cream to the rice (set the rest aside for serving). Crack in the eggs, sprinkle over the fine wheat flour, sweet paprika, salt, and ground black pepper. Mix thoroughly so that the egg and cheese bind the rice mixture evenly.

Pan-frying

Melt the lard over medium heat in a large (approx. 26-28 cm diameter), heavy-bottomed or non-stick frying pan. When hot, pour in the entire rice mixture and press it down firmly and evenly onto the bottom of the pan using a spatula or spoon to form a cohesive, flat cake.

Chef's tip

Be sure to use a flat plate or flat lid slightly larger than the pan for flipping so the cake is guaranteed to stay in one piece.

If you like spicy flavours, you can also slice a little hot pointed pepper into the mixture alongside the cured sausage.
