Szaftos, krémes és ellenállhatatlanul finom egytepsis mediterrán vacsora. Az apróra kockázott padlizsán, a zamatos koktélparadicsom és a száraz orzo tészta forró zöldség alaplével és egy egész tömb feta sajttal sül aranybarnára. A sütőből kivéve a krémesre olvadt fetát egyszerűen összeforgatjuk a tésztával, végül friss bazsalikommal és reszelt citromhéjjal koronázzuk meg.

Preheat the oven to 200 °C (180 °C for fan-assisted). Wash the vegetables. Cut the eggplant into approximately 1.5 cm cubes, finely chop the garlic cloves, and leave the cherry tomatoes whole or cut them in half.

In a large ovenproof baking dish or casserole, add the uncooked orzo pasta, diced eggplant, cherry tomatoes, and minced garlic. Sprinkle with oregano, salt, and freshly ground black pepper, then drizzle with 2 tablespoons of extra virgin olive oil, and toss thoroughly to combine.

Baking and assembly

Pour the warm vegetable stock into the baking dish and smooth out the pasta mixture. Make a small space in the center of the dish and place the whole block of feta cheese in it. Drizzle the top of the feta with the remaining 1 tablespoon of olive oil and sprinkle with a pinch of pepper.

Chef's tip

If you want an even richer flavor, you can also toss a handful of black Kalamata olives into the baking dish before baking.

Leftovers are also excellent the next day: reheated in a pan with a few drops of water or olive oil, it regains its perfect creaminess.
