Ingredients

  • 600 g chicken breast fillet
  • 125 g mozzarella cheese
  • 1 head red onion
  • 3 cloves garlic
  • 1 tbsp tomato paste
  • 1 can chopped tomatoes (400 g)
  • 1 tbsp rapeseed oil
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 handful fresh basil
  • 400 g whole wheat spaghetti (for serving)

    Preheat the oven to 200 °C.

    Season the chicken breasts with salt and pepper. In a non-stick pan, quickly sear both sides of the chicken in a little oil, then remove and set aside.

    In the same pan, sauté the finely chopped red onion and crushed garlic until translucent. Add the tomato paste, canned chopped tomatoes, and chopped basil. Bring the sauce to a boil, season with salt and pepper, then return the chicken breasts to the pan.

    Place the pan (or transfer its contents to an ovenproof dish) into the oven and bake for 15-20 minutes, depending on the thickness of the meat. In the last 5 minutes, place the sliced mozzarella on top of the chicken pieces and bake until the cheese is melted. Serve with cooked whole wheat spaghetti.
