Peel the apple, remove the core, and cut it into pieces. Peel the garlic, shallot, and ginger. Put all of these into a blender with the soy sauce, sugar, vinegar, and pepper, and blend until smooth.
Cut the beef into 3-4 mm thin strips. Lightly salt it, then toss it in the marinade. Let it rest in the refrigerator overnight, or for at least 1 hour.
Cut the red onion into eighths, peel the carrots and cut them into thin strips. Heat a little oil in a pan, and sauté the carrots with the onion for about 2 minutes, then remove them from the pan.
