Preparation method
Finely chop 50 g of salmon, then mix it with the cream cheese, ricotta, grated lemon zest, lemon juice, and chopped dill.
Line small bowls with cling film so that the edges overhang. Line the bottom and sides of the bowls with the remaining salmon slices, overlapping them slightly and letting them hang over the edge of the bowl. Fill the bowls with the cheese cream.
Fold the overhanging salmon slices over the cream, then cover with the overhanging cling film and seal tightly.
Chef's tip
Only grate the yellow zest of the lemon; the white pith can be bitter.
The best shape is achieved in bowls approximately 8 cm in diameter and 5 cm high.
